A New Standard in Frying Technology

The cooking assembly consists of an oil vat, a reserve tank with an integrated oil filtering system, a fryer basket, an odour and grease system, a wet chemical extinguishing system and a micro-controller all contained within a single mobile cabinet.

The Oil is heated electrically. The level oil within the vessel is controlled by an overflow. Overflow oil is filtered continuously and pump back to the cooking vessel. Food is loaded manually or automatically into the fryer basket through a chute above the cooking vessel. At a pre-set temperature and time interval, the basket raise, pauses, shakes the product and dumps it into a delivery station.

Cooking vapours are drawn by a fan through an automated filtering system before discharge into the room. The extinguishing system is ULC listed and is installed in accordance with the listing and extinguisher manufacturer’s instructions.

The on-board computer controls all facets of the machine and is designed for remote monitoring. The assembly provides cooking of French fries, chicken nuggets, egg rolls, etc., without the need to exhaust vapours to the outdoors and without labour to supervise an operate the frying process.
